Passover is coming.
I imagine the excitement back in Israel,
The endless sense of spring,
The feeling of cleanliness in the air,
What a sweet time full of great excitement.
The two flavors that most symbolize passover are peanuts and coconut,
They are part of the magic of this stunning holiday.
They have a taste that takes us back to a specific time period where we have sweet family memories.
This is the first year I will not be celebrating passover at home.
I really miss it and look forward to it.
This is a holiday I have a lot of excitement for.
I prepare the house for it,
The kitchen is waiting for me to celebrate with it,
The whole house is extremely excited,
And I’m even more excited.
My bamba balls recipe was born two years ago on independence Day,
And since then it is a recipe that accompanies us in many moments in our lives.
It requires 10 minutes of preparation,
And it gives a perfect dessert to serve to the table.
The magic of it is that it can be eaten at any stage of preparation,
It’s exciting and joyous and full of good things,
And can be stored in the fridge for a long time,
And it is an exciting bite at any hour of the day.
We all have the ingredients for it in the cupboard,
And they are just waiting to become this happy bite.
This is exactly the dessert that you need,
It can be made as balls or as one big and exciting cake.

Bamba Balls
Ingredients: suitable for between 15-20 balls
- ½ cup peanut butter (I recommend using smooth peanut butter with nothing in it, but you can also use one that contains peanut chips)
- ¼ cup maple syrup (For alternatives, have a look at “A little extra From Me”)
- 1 cup ground coconut chips / coconut chips / coconut flour (For alternatives, have a look at “A little extra From Me”)
- ½ – 1 teaspoon salt (Depending on the level of saltiness you like, have a look at “A little extra from me”)
- For the coating: Coconut chips / ½ cup finely ground roasted peanuts
Steps:
- In a bowl put all ingredients but the coating ingredients, put peanut butter, maple syrup, coconut chips and salt and mix with a spoon until forming a sticky but relatively stable mixture. Kindly note, if the mixture isn’t sticky enough add 2-3 tablespoons of peanut butter, if the mixture is too moist add a little coconut chips.
- Using your hands roll the mixture into balls and move them to the plate with the coconut chips / ground peanuts. Coat the bamba balls and place them on a serving plate.
The bamba balls can be served immediately after making them, but after cooling them for at least an hour they have a WOW effect 🙂
A little extra from me:
- Can be kept in the fridge in a sealed box for up to 10 days.
- Maple syrup can be substituted for agave syrup / liquid honey. Kindly note that if the honey isn’t liquid you can melt it in the microwave for 30 seconds.
- Coconut chips can be substituted for 1¼ cups of oat flour / almond flour. If the mixture isn’t sticky enough add more peanut butter, If the mixture is overly wet add a little more of the flour that you chose.
- I recommend using smooth peanut butter that has nothing in it. If the peanut butter is firm you can heat it in the microwave for between 30-60 seconds, it’s important to choose liquidy and moist peanut butter.
- The balls can also be made without the ground peanuts and coat only with coconut chips or no coat at all, although the ground peanuts do all the magic.
- The balls can also be coated with 100g of melted chocolate and a pinch of salt.
- Do you also wish to make a bamba ball cake? This can be easily done by tripling the amounts of ingredients, making beautiful bamba balls and placing them in a pan. You can decorate the cake with flowers from the garden and allow the heart to rejoice happily.
- I like the saltiness of the mixture relatively strongly, because then it really resembles bamba. That’s why I recommend putting almost 1 full teaspoon of salt, mixing everything and if you feel like adding more salt, add some more.
