White cabbage salad with yogurt dressing
Ingredients
Ingredients suitable for a family salad bowl
- Finely chopped medium cabbage (4 cups of chopped cabbage). I recommend chopping it in a food processor
- 3 finely chopped stalks of spring onion
- A handful of finely chopped mint leaves
- 2 green apples cut into tiny cubes
- ⅓ cup chopped cranberries / raisins (not a must)
- ½ cup roasted almonds (can be replaced with any nut of your choice)
For the dressing
- 1 cup of unflavored yogurt (you can replace it with sour cream or cream cheese)
- 1 spoonful of mustard
- Juice from a whole lemon
- 1 teaspoon salt
- 1 teaspoon garlic powder
- Lemon zest if you like it
Preparation
Choose a large and wide bowl.
Start by making the dressing: put the yogurt, mustard, lemon juice, salt and garlic powder in a bowl and mix well.
Add the spring onion and mint and mix again.
Add the diced apples and cranberries and mix again.
Add the almonds and mix.
Add the cabbage and mix everything with great joy.
Put a mint leaf on top of the salad bowl and bring it to the center of the table 🙂
A little extra from me:
- The salad can be kept in the fridge for 3 days.
- The almonds will become soft over time.
- You can replace any ingredient you choose with another ingredient you like. For example, the almonds can be replaced with roasted cashews or the apple can be replaced with shredded pomelo.
- This salad is wonderful and will happily accept changes 🙂
