The outcome is usually known in advance.
And the way is significant and wonderful within it.
The last year has been a year of an empowering and exciting journey, which I have no way of describing in words (yet).
The purpose of our journey was clear and understandable,
And the path was only in our imaginations.
In the end the path was bigger, stronger, more powerful, more exciting and even happier.
I couldn’t imagine this journey, it was full of everything,
And the path is the one that further sweetens the final result, which I’m still in the process of finishing.
This recipe was born from the desire to enable everything.
There are many ways to reach the result and sometimes even when it’s known and clear the journey to it can change the way it looks.
And this time I chose three loved ways to make the perfect cookie,
The ways that accompanied us last year and more will accompany us in the coming year.
Everyone will choose their own path.
In a way that suits them at that moment,
In the bite that’ll be received from our common path,
In one recipe that gives us the ability to choose our path.
This wonderful cookie is delicious in any way we choose to make it,
In the microwave – it’ll be ready the fastest,
It’ll be soft and tender and will give us a warm and happy bite in minimum time.
In a panini press – we’ll get a different shape of a cookie. It’ll be ready in a little more time than the microwave, it’ll be super crispy and brown but hardly soft and puffy.
In the oven – the baking time will be the longest, and you’ll get a cookie that’s both soft and crispy, tanned and puffy.
Each of the ways of preparation will give you a dream cookie of a different nature and another way to be pampered.
You just have to choose the way that best suits you at that moment,
What do you like more
And what do you like less,
What are the things you won’t compromise on?
And what things will be marginal,
How much do you put yourself in the considerations,
Or maybe you don’t,
And it’s just as important if you choose a different way each time to learn from it and experiment with it or if you straight away choose the result that you think is the best for you.

chocolate chip cookie
Ingredients
Suitable for one personal cookie
- 1 tablespoon peanut butter or any nut butter of your choice
- 1 tablespoon maple syrup (you can replace it with honey / date honey)
- 1 teaspoon non-dairy / dairy milk
- A tiny bit of salt – really just a few grains
- 3-4 tablespoons oat flour (for alternatives, have a look at “A little extra from me”)
- A tiny pinch of baking powder
- 1 tablespoon chopped dark chocolate / chocolate chips
Preparation
In a bowl put the peanut butter, maple syrup, milk and salt and mix well. Add the oat flour and baking powder to the bowl and mix into a sticky dough. Add the chocolate and mix again into a wonderful cookie dough.
There are several ways to make this cookie.
Each one is wonderful,
Each has its advantages and disadvantages.
Each one is fun and enjoyable,
All you have to do is choose:
- Microwave – put a piece of parchment paper on a small plate that’s suitable for heating in the microwave. Place our darling cookie on the parchment paper and put it in the microwave for heating for 40 seconds. Take out of the microwave and cool slightly before serving. Note that the cookie doesn’t turn out brown with this preparation technique, it’s soft and tender 🙂
- Oven – heat an oven to 355°F (180°C), preferably in turbo mode, but it’s not a must. Place our cookie on an oven tray lined with parchment paper, and put it in the oven to bake for 6-8 minutes. The cookie swells and tans using this preparation technique 🙂
- Panini press – heat the panini press and place the cookie dough between two sheets of parchment paper. Put the sheets of parchment paper with the cookie in them into the panini press and cook for 1-2 minutes. Take out of the panini press when the cookie is still soft and has fine burn marks on it. Cool a little and eat it whole or cut into cubes 🙂
A little extra from me:
- The cookie can be kept in a sealed box on the counter for 2 days, although it’s better to prepare before eating.
- You can replace the oat flour with almond flour / green buckwheat flour.
- For the microwave version: 3 tablespoons of oat flour will give a slightly crispy cookie, and 4 tablespoons of oat flour will give a softer cookie.
