And it’s time to pull the solution for the perfect cookie bite out of my ideas drawer.
Its magic begins with the dough, which is prepared in a few minutes of quick work,

And baking it in a hot oven.
Five very quick actions,
That give us lots of wonderful cookies for everyone present at the graduation party.

Because this is a quick recipe that makes lots of wonderful bite-size cookies!

End of Year Cookies
Ingredients: suitable for a loaf pan size 7.8” * 9.8” (20*25cm)
Kindly note that I doubled the ingredients and baked the cookie in a larger baking pan, you can also bake in the standard oven pan with parchment paper on top and no baking pan.
- ½ cup almond butter (For alternatives, have a look at “A little extra from me”)
- ¼ cup maple syrup
- ¼ cup non-dairy milk (Whichever you like)
- Pinch of salt
- 1¾ cups oat flour (For alternatives, have a look at “A little extra from me”)
- 1 teaspoon baking powder
- 100g chopped dark chocolate
Steps:
- Preheat the oven to 350°F (175°C) on turbo mode, and line a baking pan with parchment paper.
- In a bowl, put all liquid ingredients, the almond butter, maple syrup, non-dairy milk and salt and mix well.
- To the bowl, add oat flour and baking powder and mix well into a sticky dough, but not too sticky. If the dough is too wet, add 2-3 tablespoons of flour and mix, if the dough is too dry, add 2-3 tablespoons of non-dairy milk and mix until you get a dough that is comfortable to work with. Aim to reach a dough texture like in the pictures of the preparation steps at the bottom of the recipe.
- Add the toppings to the dough and mix well. I added chopped dark chocolate.
- Roll out the dough between two sheets of parchment paper until it’s as thick as half a finger, remove the top parchment paper and use a knife to cut the dough into beautiful and even squares.
- Put in the oven to bake for between 12-17 minutes, depending on the thickness of your cookies and the size of the pan. When the cookies turn golden, take the pan out of the oven.

A little extra from me:
- The cookies can be kept in a sealed container on the counter for up to 4 days, the crispness of the cookies decreases over time.
- Oat flour can be substituted for 2¼ cups of almond flour.
- You can use 1 cup of oat flour + 1 cup almond flour instead of 1¾ cups of oat flour.

- Almond butter can be substituted for 1 egg size M. Note that the best and softest version is the one containing almond butter.
- Almond butter can be substituted for peanut butter / tahini for those who like the combination of it with chocolate. The almond spread has a neutral and wonderful taste.
- The dough is delicious and edible even before baking, feel free to gobble while preparing 🙂
- Dark chocolate can be substituted for cranberries / raisins / crushed nuts.
