This rice porridge will forever remind me of my grandma Esther.
It’s a one and only,
Indulging and soft,
Warm and thick.
As a child I used to call it “grown ups porridge”.
I’m not even sure what was the reason we called it that, but it just stuck.
This comforting and warming bite is one of the best bites you’ll ever encounter.
It’s built on three main ingredients,
And you’ll fit the seasoning to whatever you’ll feel like at that same moment.
You can go classic with maple syrup and cinnamon,
Or go corrupted with thick and rich chocolate.
I love to mix honey in my porridge and scatter chopped pistachios on top.
Any topping will be welcomed.
It’ll excite you,
It’ll hug you,
And it’ll make you more joyful and happy.
This is a porridge of home,
One that makes you want to hug the bowl tight.

It makes your heart smile and your mind sail away to sweet memories.

Grandma Esther’s Rice Porridge
Ingredients: suitable for 10 dishes
- 1 cup basmati rice / persian / jasmine
- 2 cups coconut cream (For alternatives, have a look at “A little extra From Me”)
- 3½ cups water
- ⅓ cup maple syrup
- ½ teaspoon cinnamon (Not a must)
Steps:
- Put all ingredients in a pot, rice, coconut cream, water and maple syrup and mix well.
- Cook on a low flame for 30-35 minutes or until the rice turns very very soft. It’s very important to stir every few minutes so the rice won’t stick to the bottom of the pot. I recommend covering the pot with the lead between each stir.
- Towards the end of cooking add the cinnamon and stir.
Once the porridge is ready you can serve it in a hot bowl straight from the pot and sprinkle a little more cinnamon on top or any other topping you like, and enjoy 🙂
A little extra from me:
- Can be kept in the fridge in a sealed box for up to 5 days.
- The porridge is wonderful straight from the pot and even cold from the fridge. If you like to warm it, mix with a little milk and warm it in the microwave / pot.
- Coconut cream can be substituted for any non-dairy milk you choose / cow milk.
- Can add any topping you like: chocolate, honey, date honey, cinnamon, nuts, almonds, almond butter and more.
