A bite of my cheesecake is full of magic and pleasure.
And its main charm is that it adapts itself to any home.
Almost any kind of flour will work,
It’s soft and delicious in every version,
It has four ingredients that we all have at home,
All you have to do is mix them together.
And put it in the microwave for a short ride.
That’s it, that’s all the magic – and it’s all magic.

Microwave Mini Cheesecake
Ingredients
Suitable for one personal dish
- 1 egg (size M / L)
- 2 tablespoons classic cream cheese (for alternatives, have a look at “A little extra from me”)
- 1 tablespoon maple syrup (for alternatives, have a look at “A little extra from me”)
- 1 tablespoon flour of any type you choose. I chose almond flour (I recommend choosing almond flour / oat flour / quinoa flour / coconut flour / wheat or spelt flour (which contain gluten)
- A tiny pinch of baking powder
- A little lemon zest / vanilla extract (not a must)
Preparation
In a small bowl, put the egg and the cream cheese and mix until a uniform batter is formed. Add the flour and baking powder and mix again.
Transfer the batter to a cup / saucer suitable for the microwave and put it in the microwave for gradual cooking.
Put in for 1½ minutes and check if another ½ minute is needed.
How do you know the cake is ready? Take a look at the center of the cheesecake. If it’s wet and still not “cooked”, put it in the microwave for another ½ minute. Repeat this action if the cake is still not cooked.
I recommend cooking it in the microwave for a total of 2 – 2½ minutes.
Remove the mug from the microwave with the help of a towel. Place a small plate on top of the cup and turn the contents of the cup onto the small plate, so that the cake is placed upside down on it.
If there’s a little liquid, pour it out or absorb it with a paper towel.
Serve it the way it is or alongside fresh fruit, just don’t forget a huge smile when serving this happy bite 🙂
:A little extra from me
- I recommend eating the cake in close proximity to preparation, the cake is soft, warm and super indulgent.
- The cake can be kept in the fridge in a sealed box for 2 days.
- The best version of this cake is the one containing almond flour / oat flour.
- You can bake the cake in the oven at 355°F (180°C) for 10-12 minutes.
- Each microwave has a different heat intensity, so the cooking time will differ from one microwave to another.
- You can replace the cream cheese with heavy cream cheese / thick yogurt / thick non-liquid vegan cheese.
- You can replace the maple syrup with any other sweetener you want – sugar / honey / sweetener that’s suitable for diabetics.
