This is our last Saturday in Israel.
In five days we will begin our journey to Italy.
A journey of fulfillment,
A journey of whole hearts ready to go on a journey for the mom and the woman of the home.
I’m not saying “Goodbye”,
I’m only saying “We will meet soon”,
I’ll meet you soon, smells of the fields surrounding our house,
I’ll meet you soon, sounds of the fields,
I’ll meet you soon, sunrise at home,
I’ll meet you soon, sunset near the big strawberry tree,
I’ll meet you soon, our warm home that we built,
I’ll meet you soon, my kitchen,
I will just meet you soon,
I’m not saying goodbye, because we will meet again!
This orange cake is a combination of many feelings and emotions,
The first is the feeling of home it gives,
The second are the smells of the fields and citrus trees around every corner.
And the third is saying goodbye to my kitchen, my kitchen tools and my oven.
Orange, coconut and olive oil –
The softer, yes it’s the softer cake ever,
It knows how to hug exactly that spot in your body that needs it,
Knows how to give you the right boost of energy at the right time.
It’s a cake that makes you happy in your heart and thoughts,
It’ll make you sail away to sweet memories and emotions,
And it’ll give you all the magical moments of family and serenity.

Orange Coconut and Olive Oil Cake
Ingredients: suitable for a stiff loaf pan
For the cake:
- 4 eggs
- ½ cup orange juice
- ¼ cup olive oil
- Pinch of salt
- A zest out of a whole orange
- ⅓ cup sugar (For alternatives, have a look at “A little extra From Me”)
- ½ cup almond flour (For alternatives, have a look at “A little extra From Me”)
- ½ cup coconut flakes (For alternatives, have a look at “A little extra From Me”)
- 1 cup oat flour (For alternatives, have a look at “A little extra From Me”)
- A bag of baking powder (10g)
For the glaze:
- 3 tablespoons almond butter / tahini
- 2 tablespoons maple syrup
- ¼ teaspoon cinnamon (Not mandatory)
- Handful of coconut flakes
- A little orange zest
Steps:
- Preheat the oven to 350°F (175°C) on turbo mode and line the loaf baking pan with parchment paper.
- In a mixing bowl put all wet ingredients, eggs, orange juice, olive oil, sugar, orange zest, and salt and mix well.
- Add dry ingredients to the bowl, almond flour, coconut flakes, oat flour and baking powder and mix well until receiving a uniform and smooth mixture.
- Put the mixture in the baking pan and put inside the oven, bake for between 30-40 minutes or until a toothpick or wooden skewer inserted into the cake comes out dry.
- Take the cake out of the oven and cool for a little while.
- Meanwhile let’s make the glaze: in a small bowl put almond butter, maple syrup and cinnamon and mix well.
Smear the glaze on top of the cake, spread coconut flakes and orange zest and serve 🙂
A little extra from me:
- Can be kept in a sealed box in the fridge for up to 4 days.
- Sugar can be substituted for maple syrup, but the cake will come out less sweet.
- Almond flour can be substituted for more oat flour / rice flour / coconut flour.
- Coconut flakes can be substituted for more almond flour / oat flour.

15 בJune 2024 at 13:52Hello, I’ve just noticed in your ingredients list for the glaze you mentioned 3 cups of almond butter and 2 cups of maple syrup. I am assuming you were hoping to type in 3 tablespoons of almond butter and 2 tablespoons of maple syrup? Just clarifying. And also, are all the other listed ingredients in the appropriate ratios?
