Our blessed routine is slowly coming back to us and now the time has come to make an insane bite that’ll fit perfectly into any day of the week.
My protein balls are based on one secret and wonderful ingredient that makes them the most wonderful bite ever.
They don’t contain protein powder and are suitable for a wide range of people.
They provide a bite that’s full of precision and joy, a bite you just can’t stop nibbling on.

Protein balls
Ingredients
- 1 cup dry quinoa (white / red / black – everything will work)
- ½ cup almond butter (for alternatives, have a look at “A little extra from me”)
- ½ cup maple syrup (for alternatives, have a look at “A little extra from me”)
- ¼ cup cocoa powder (for alternatives, have a look at “A little extra from me”)
- Pinch of salt
- A little almond butter on top for decoration (not a must)
Preparation

Heat a wide pan and add the dry quinoa to it (without washing beforehand). Start mixing the quinoa in a pan over medium heat, mix lightly and gently, the quinoa will make small crackling sounds, it’ll change its color a little (if it’s white quinoa) and the noise it’ll make in the pan will sound more “dry”.
The roasting time is about 5 minutes. At the end of the roasting, transfer the roasted quinoa to a plate and let it cool. Transfer it to a smoothie blender and grind it into a powder. You can leave some of the quinoa ungrounded, it adds a fun texture to the balls.
Put the almond butter, maple syrup and salt in a bowl and mix. Add the cocoa powder and the quinoa powder that we prepared and mix again to a sticky but not too sticky paste.
Let the paste rest for about 5 minutes, the ground quinoa mixture will swell a little and absorb more moisture.
Using clean hands (important) create small balls (try to choose a mass the size of a teaspoon) and transfer the balls to a plate / box.
The balls are not sticky and require coating, if you want some kind of coating you can coat them with cocoa powder or coconut powder.
I chose to sprinkle a little almond paste on top of the balls for decoration and serve with great joy 🙂
A little extra from me:
- The protein balls can be kept in the fridge in a sealed box for 1 week and in the freezer in a sealed box for 2 months.
- You can omit the cocoa powder and replace it with coconut powder or almond flour.
- For those who love the taste of chocolate – the cocoa powder will add a lot.
- You can replace the almond butter with any nut butter / tahini.
- You can replace the maple syrup with date honey / honey.
- You can add cinnamon if you like.
- You can also create large protein balls, but pay attention, it’s a satisfying and very accurate bite. I recommend making them small and eat two if you want, rather than creating large balls.
