Vegetable soup is a bite that we all love.

Here is a crazy recipe for a rich and quick vegetable soup,
A soup that has everything in it and is ready in a few quick minutes of work.
Because who doesn’t like coming home to a pot of rich and super quick vegetable soup,
A pot that requires a minimum of work and gives maximum taste and comfort to the body.
All you need to do is put all the vegetables in the food processor,
Grind them in pulses and transfer to the pot,
From there the road is easy and fast and in a few short actions you will get this heavenly bite of rich and fast vegetable soup that’s pampering and huggable.

Is to quickly grind the vegetables in a food processor, quickly cook them and that’s your bite right there.

A rich and quick vegetable soup
Suitable for a family pot of 6 dishes
- 2 carrots
- 1 large white onion
- 1 medium sweet potato
- 1 large potato
- 2 zucchinis
- 1 garlic clove
Spices - according to your personal taste. I have:
- ½ teaspoon turmeric
- ¼ teaspoon cumin
- Pinch of cinnamon
- Pinch of white pepper
- 1 teaspoon salt
- A bunch of dill / finely chopped parsley
Put all our vegetables in the blender,
I recommend peeling the onion, sweet potato and potatoes. You really don’t have to peel the carrots, just make sure to wash them well.
Grind the vegetables in pulses until the desired texture is obtained,
Pay attention not to grind them into pulp but into vegetable crumbs that will fit perfectly into the soup and the bite.
Heat a little olive oil in a pot and put all the vegetables in it.
Fry everything for a few minutes on high heat until the vegetables begin to surrender to the heat. Make a hole in the center of the pot between the vegetables, pour a little olive oil and our spices into it. First mix the spices with the oil so they open their aromatics from the heat. After that mix them with all the vegetables until they’re incorporated into them.
Add liquids up to the height of the vegetables, be careful not to add too much liquid, mix and cover the pot until it boils. Lower the heat and cook for 20-30 minutes. At the end of cooking, add the chopped dill, stir and turn off the heat and let the soup rest for a few minutes.
Serve directly into indulgent bowls that are fun to hug, and enjoy 🙂
A little extra from me:
- The soup can be kept in the fridge in a sealed box for 4 days.
- You can put any vegetable you choose. The blender (food processor) method just makes the whole matter of cutting the vegetables before making the soup easier.
- If you don’t have a food processor, you can just cut all the vegetables into small pieces.
- You can add chopped parsley / cilantro / dill / not add any herbs, the choice really depends on your personal taste.
