Meet my rising sun cake.
It’s timeless and one of the most wonderful cakes out there.
This is a cake that makes every day festive.
Its calm preparation,
And the attention to placing each slice of fruit on it,
Makes everyone who meets it fall in love.
It’s a cake of home and good days,
This is a cake of dreams coming true,
This is a cake of a happy family and children,
This is a cake with wisdom.
It’s mesmerizing with its beauty,
Maddening in taste,
It looks spectacular in the center of the table,
And perfect and even tastier the day after making it.
This cake is my version of my grandmother’s wonderful summer cake.
My grandmother’s wonderful kitchen wisdom accompanies me in many sweet moments.

The feelings in my hands,
The right mix,
Achieving the accurate texture,
And the deep emotion that goes into preparing each and every bite.
I named the plum cake –
“The Rising Sun Cake”,
And this is because it symbolizes the middle of summer.
These sweet days of the year,
When everyone surrenders to the heat,
And begin to slow down the pace of life,
Connect to the family atmosphere,
The ease in floating on water,
To the fierce sweetness that hides in the summer fruits,
And to the heart that every summer expands more and more.
A few minutes of great therapy,
Lots of love for every slice of fruit that’s placed on the cake,
And this perfect bite is yours.

Summer Plum Cake
Ingredients: suitable for a round pan 10.2” or 11”(26cm or 28cm) diameter
- 4 eggs (Size M / L)
- ¼ cup olive oil
- ½ cup non-dairy milk
- A tiny pinch of salt
- ½ cup sugar (For alternatives, have a look at “A little extra from me”)
- A little vanilla extract (Not a must)
- 1 cup almond flour (For alternatives, have a look at “A little extra from me”)
- 1 cup oat flour (For alternatives, have a look at “A little extra from me”)
- 2 teaspoons baking powder (10g)
- ¼ teaspoon cinnamon (Not a must)
- A little vanilla extract (optional)
- 5-6 plums, not too hard and not too soft (For alternatives, have a look at “A little extra from me”)
- A little sugar powder to sprinkle over the cake
Steps:
- Preheat the oven to 355°F (180°C), turbo mode (Not a must but recommended) and line a baking pan with parchment paper.
- Pit the plums and cut them into thin slices.
- In a bowl put all the liquid ingredients, the eggs, olive oil, non-dairy milk, sugar, salt and vanilla extract and mix well.
- To the bowl add dry ingredients, the almond flour, oat flour, baking powder and cinnamon (if you chose to add it) and mix again to a smooth and slightly liquid mixture.
- Transfer the mixture to the baking pan and arrange the slices of plums in a circular shape like a beautiful shining sun (you can spread the plums over the surface of the cake in any shape you choose).
- Put in the oven to bake for 30-35 minutes or until a toothpick comes out dry from the cake.
Take out of the oven, cool and serve with great joy 🙂
A little extra from me:
- The cake can be kept in a sealed container in the fridge for 4-5 days.
- Almond flour can be substituted for coconut flour / rice flour / more oat flour.
- Oat flour can be substituted for almond flour / rice flour / coconut flour / spelt flour (Contains gluten).

- You can make the cake using only spelt flour and use 1½ cups of spelt flour (Contains gluten).
- Sugar can be substituted for ½ cup maple syrup / agave syrup.
- You can replace the plums with any topping you like – thinly sliced summer fruits (Such as nectarines, cherry halves, grape slices, frozen berries) / chocolate chips / raisins and more.
