Recently I’ve been making my perfect Tahini bread.
Each time I take a bite of it I understand how insanely good it is.
Out of the same repeatable bite came the dreams about this perfect pita bread.
My tahini bread has been a great inspiration for me.
I woke up in the morning and told myself that today I’m going to develop the perfect recipe for my tahini pita bread.
It was a busy day and different tasks just kept on popping up, until that moment where hunger defeated me and created all the magic in the world.
It was time for dinner, Michael and Noi had begun popping their heads in the kitchen to see what I was going to make this time.
In a spur of the moment when I decided I needed to make a quick and indulging meal, the pita came to my mind.
I mixed all ingredients well together – that’s the most important and significant part of making this recipe, mixing!
So mix very very well, ok??
I put the mixture in a flat micro-safe bowl,
Put it in the microwave and two and a half minutes later the most marvelous magic I’ve ever seen in my life occurred!!!
This recipe is incredible,

That will come to your mind in every moment of hunger.
It’s made out of five ingredients.
These ingredients you probably already have at home,
Therefore the recipe doesn’t require any preliminary grocery shopping.

This amazing bite that doesn’t require complex preparation
And gives you the texture, taste and serenity that everyone needs.

It’s a low in carb recipe,
Gluten-free,
Non-dairy,

It’ll contain whatever you want it to,

Tahini Pita Bread
Ingredients
Ingredients: suitable for one pita
- 1 egg (Size M / L)
- 1 chubby tablespoon of raw tahini (Try not using tahini that was in the fridge preferably room temp tahini)
- Pinch of salt
- 1 tablespoon room temp water
- ½ teaspoon baking powder
That’s it!!!!!!
Preparation
Take out two small bowls, one for mixing the mixture and the second should be micro-safe. Choose a bowl size suitable for a mini pita, I recommend choosing a relatively small and deep bowl, I chose a bowl 14cm (5.5“) diameter.
Put all ingredients in the mixing bowl and mix very well. Pay attention – mixing is very very very important so mix well.
Take the micro-safe bowl and smear a little olive oil in it
Pour the mixture into the bowl and put in the microwave for 2½ minutes and gently take out of the microwave.
And that is it!!!!! Kindly note that the power level for some types of microwaves is relatively strong, therefore if the pita comes out dry or stiff try putting the pita in the microwave only for 2 minutes.
Cool the pita on the counter / cutting board for a little while, and not in the bowl. Open a pocket, fill with good things and gobble.
A little extra from me:
-
- Can be kept in the fridge but there’s no reason, make it whenever you like to eat it.
- Can spread on top of the mixture before putting in the microwave roasted sesame / hyssop / paprika / garlic chips / chia seeds / flax seeds etc.
- Can use whole tahini / regular, there’s no difference. Whole tahini will provide a slightly bitter taste and regular tahini will provide a slightly sweet taste.
- Tahini can be substituted for almond butter / peanut butter / cashew butter (The best version is the one with tahini).

- Can also bake in the oven, But the pita will come out a little flat, somewhat like laffa bread rather than a chubby pitta: preheat the oven for a few minutes to 355°F (180°C) and bake for between 7-10 minutes. Of course using an oven-safe dish is important.
- As for the eggs: pregnant ladies, as long as the mixture isn’t wet (Which should only happen if the pita isn’t ready) it’s just fine. The microwave cooks the pita at a very high temperature, for that reason the pita gets puffed up so quickly – so the heat in the microwave goes over 110°F (45°C). For whomever wants to warm it a bit more to feel safe can make the pita in the microwave, cut it in half and burn them on a pan for a few seconds.
