The Perfect Honey Cake
Ingredients: suitable for a round pan with a hole in the center with a 10.2” (26cm) diameter / 2 small loaf pans
- 4 eggs
- ¼ cup olive oil / coconut oil
- ¾ cup honey
- Pinch of salt
- 1 tablespoon sugar (Sweet lovers can add another 3 tablespoons of sugar)
- ¼ cup espresso / a teaspoon of instant coffee dissolved in a ¼ cup of hot water / a ¼ cup of black tea (The choice is yours, I chose espresso)
- 1 small can (113g) of applesauce without added sugar / 1 whole peeled apple, grated on the thin part of the grater (For alternatives, have a look at “A little extra from me”)
- 1 cup almond flour
- 1 cup oat flour (For alternatives, have a look at “A little extra from me”)
- 2 teaspoons baking powder (10g)
- Almond silvers for decorating the cake (Not a must)
- To season the cake: ½ teaspoon of cinnamon / ½ teaspoon of ginger powder / a pinch of clove spice (Not mandatory but adds a lot, I love cinnamon)
Steps:
- Preheat the oven to 350°F (175°C) on turbo mode (Turbo mode isn’t a must but I recommend it), and line a baking pan with parchment paper.
- In a bowl put all the liquid ingredients, the eggs, oil, honey, sugar, applesauce, salt and coffee and mix well.
- To the bowl add all dry ingredients, the almond flour, oat flour and baking powder and mix well. If you chose to season the cake, now is the time to add the spices.
- Transfer the batter to the baking pan, sprinkle some almond chips over the cake (if you like to) and put in the oven to bake for 20-25 minutes or until a toothpick comes out of the cake dry.
Take the cake out of the oven, cool it a little, take it out of the baking pan and serve it to the table 🙂
A little extra from me:
- The cake can be kept in a sealed box in the fridge for up to 4 days.
- If you want to get a soft and good cake, I recommend taking it out of the fridge about two hours before eating it.
- You can prepare the cake the day before the eve of the holiday and take it out of the refrigerator about 2-3 hours before serving.
- The oat flour can be substituted for rice flour / teff flour / finely ground yellow corn flour / with an extra ½ cup of almond flour.

- The flour mixtures can be substituted for a 1¾ cups spelt flour / regular flour (Both contain gluten).
- You can omit the sugar.
- Applesauce can be substituted for a banana (Keep in mind that the taste will be noticeable) / omit it, but I do not recommend doing so.
