Almond and coconut cookies.
\n<\/span>Only the name of this bite sounds dreamy.
\n<\/span>And this bite is making a lot of dreams come true.<\/span><\/p>\n

There\u2019s nothing like the story of the birth of a recipe,
\n<\/span>And this recipe has one hell of a story.
\n<\/span>This week I opened a new bag of coconut and the smell that came to my nose was addictive and filled with memories.<\/span><\/p>\n

I remembered the Mimouna celebrations at my grandma Esther\u2019s.
\n<\/span>I remembered the decorated coconut cookies she used to make, each cookie was carefully made and had infinite beauty.
\n<\/span>I also remembered how I would stand as a child in front of the colorful and rich cookie table hypnotized and filled with lust and excitement.<\/span><\/p>\n

So I decided I was going to give myself back a taste from the past.
\n<\/span>Decided I wasn\u2019t going to lose that tickle of a memory I had in my nose.
\n<\/span>I was going to bring some flavors back to myself, but my way.
\n<\/span>The taste of coconut mixed with marzipan in a way that they both have a good and subtle sweetness to them.
\n<\/span>It\u2019s true, these cookies are not a classic Mimouna cookies,
\n<\/span>But they\u2019re simple cookies with a taste for more,
\n<\/span>And I believe the very best spice for cookies is the \u201ctaste for more\u201d, and not every cookie has this magic.<\/span><\/p>\n

These are cookies that you\u2019ll make in 10 minutes and gobble in 5 minutes.
\n<\/span>They\u2019re insane,
\n<\/span>They\u2019re indulging,
\n<\/span>They\u2019re crazy,
\n<\/span>They\u2019re soft,
\n<\/span>They\u2019re moist.
\n<\/span>They\u2019re aromatic,
\n<\/span>And they\u2019re filled with a \u201ctaste for more\u201d.<\/span><\/p>\n

Here is a quick recipe, easy and full of fun for the weekend,
\n<\/span>A recipe that was born out of a memory and a desire to bring myself back some of the feelings from the past.
\n<\/span>A recipe of longing and gratitude,
\n<\/span>Thank you for memories full of joy and happiness,
\n<\/span>Memories full of smells and sounds,
\n<\/span>Loving memories that I hope to never forget \u2764<\/span><\/p>\n

Ingredients: suitable for between 10-15 cookies<\/b><\/p>\n

    \n
  • \u00bd cup almond butter<\/span><\/li>\n
  • \u00bc cup maple syrup<\/span><\/li>\n
  • Pinch of salt<\/span><\/li>\n
  • 1\u00bd shredded coconut<\/span><\/li>\n
  • \u00bd teaspoon baking powder<\/span><\/li>\n<\/ul>\n

    Stepes:<\/b><\/p>\n

      \n
    1. Preheat the oven to 355<\/span>\u00b0F <\/span>(180<\/span>\u00b0<\/span>C) on turbo mode and line a baking pan with parchment paper.<\/span><\/li>\n
    2. In a bowl put almond butter, maple syrup and salt and mix well.<\/span><\/li>\n
    3. To the mixture add shredded coconut and baking powder and mix well until forming a mixture that\u2019s convenient to work with.<\/span><\/li>\n
    4. Create small-medium size cookies out of the mixture and place them on the baking pan.<\/span><\/li>\n
    5. Put the cookies in the oven and bake for 8-10 minutes until they turn a little gold.<\/span><\/li>\n<\/ol>\n

      Take out of the oven, cool for a little bit and gobble \ud83d\ude42<\/span><\/p>\n

      A little extra from me:<\/b><\/p>\n

      • Can be kept in a sealed box for up to 3 days.<\/span><\/li>\n
      • I recommend using almond butter in this recipe. If you would still like to substitute it you can use tahini \/ peanut butter, although their taste will be noticeable.<\/span><\/li>\n
      • If you like cinnamon \u2013 you can add a pinch of it to the recipe.<\/span><\/li>\n<\/ul>\n
