A new recipe was born this week.
\nIt was created from the longing for the infinite feeling of liberation you get on a vacation.<\/p>\n

It’s a sweet and sour bite,
\nAll refreshing and super summery,
\nIt\u2019s exciting and beautiful,
\nIt’s so easy to make.
\nAnd it makes everyone who bites it feel like they\u2019re on some island in the Caribbean for a few long seconds.<\/p>\n

The combination of coconut and lemon is perfect,
\nAnd it’s really not just for fans of the genre.
\nEvery bite will make you fall in love with it all over again,
\nAnd just the thought that this bite is waiting for you in the fridge,
\nWill make you open it at any time you get that tickle in your tummy.<\/p>\n

It\u2019s the sweet bite of the end of the meal,
\nIt\u2019s perfect for school lunch boxes,
\nIt\u2019s the morning and after lunch snack.
\nIt\u2019s a amazing to take with you to the playground,
\nPerfect for a moment of energy boost before training,
\nAnd accurate for an evening in front of the TV after the children fall asleep.<\/p>\n

You just need a bowl, a spoon, a measuring cup and ten minutes to spare.

Lemon Coconut Balls<\/strong><\/p>\n

Ingredients: suitable for about 10 medium sized balls<\/strong><\/p>\n

    \n
  • \u00bc cup almond butter<\/li>\n
  • 3 tablespoons maple syrup<\/li>\n
  • 1 tablespoon lemon juice<\/li>\n
  • A little lemon zest<\/li>\n
  • 1\u00bc cups coconut powder (For alternatives, have a look at \u201cA little extra from me\u201d)<\/li>\n
  • A tiny pinch of salt<\/li>\n
  • Coconut powder for coating the balls<\/li>\n<\/ul>\n

    Steps:<\/strong><\/p>\n

      \n
    1. In a bowl put the liquid ingredients, the almond butter, maple syrup, lemon zest and lemon juice and mix well.<\/li>\n
    2. To the bowl, add coconut powder and salt and mix again. If the mixture is too sticky, it’s worth adding a little more coconut powder.<\/li>\n
    3. Put coconut powder on a flat plate.<\/li>\n
    4. Using slightly wet hands, form balls from the dough. Roll the balls in the coconut powder and fully coat them.<\/li>\n<\/ol>\n

      Put the balls in a sealed box in the fridge or freezer, so that they\u2019ll be waiting for us for every moment of that tickle in our tummies or longing for a wonderful summer vacation \ud83d\ude42<\/p>\n

      A little extra from me:<\/strong><\/p>\n

      • The balls can be kept in a sealed box in the fridge for up to a week \/ in the freezer for about a month.<\/li>\n
      • The bright yellow color of my balls comes from the nutritional supplement I added to them. Without the nutritional supplement the color of the balls will be yellowish and not bright yellow. The nutritional supplement I added to the balls is vitamin B complex (if you choose to add the nutritional supplement, it must be added in the liquid ingredients step before adding the coconut powder).<\/li>\n
      • Coconut powder can be substituted for 1\u00bd cups almond flour\u00a0 \/ \u00bd cup coconut powder + 1\u00bc cups almond flour.<\/li>\n<\/ul>\n
