A new jewish year is right around the corner.
\nThe flowers begin to bloom,
\nThe sky smiles a huge smile,
\nAnd one can feel the excitement in the air.<\/p>\n

I have a huge love for honey cakes,
\nThey excite me,
\nThey are full of love,
\nThey symbolize joy,
\nAnd they provide a new beginning.<\/p>\n

There are many types of honey cakes.
\nHigh and low,
\nHeavy ones and light ones,
\nSweet and dense.
\nEach is beautiful and delicious in its own way.<\/p>\n

This year I decided I\u2019m turning this exciting classic into a bite that\u2019s all about precision.
\nAnd this cake
\nOh what a cake
\nA bite of it and all of your dreams come true.
\nIt\u2019s soft and gentle,
\nIt\u2019s sweet just in the right amount,
\nIt\u2019s perfect and wonderful.<\/p>\n

\nEven those who doesn\u2019t like it as much will enjoy the cake just as it is,
\nAnd no, you won\u2019t feel the presence of this ingredient at all.<\/p>\n

Honey Cake<\/h1>\n

Ingredients: suitable for a standard loaf pan \/ a round pan 10.2\u201d (26cm) diameter\u00a0<\/strong><\/p>\n

  • 4 eggs (Size M \/ L)<\/li>\n
  • \u00bd cup honey<\/li>\n
  • \u00bc cup olive oil<\/li>\n
  • A little cinnamon (not a must)<\/li>\n
  • \u00bc cup maple syrup (for alternatives, have a look at \u201cA little extra from me\u201d)<\/li>\n
  • 1 small can applesauce 112g (about \u2153 cup) \/ peeled and grated green apple<\/li>\n
  • The secret ingredient \u2013 2 tablespoons of peanut butter (for alternatives, have a look at \u201cA little extra from me\u201d)<\/li>\n
  • 1 cup almond flour<\/li>\n
  • \u00bd cup oat flour (for alternatives, have a look at \u201cA little extra from me\u201d)<\/li>\n
  • Pinch of salt<\/li>\n
  • 2 teaspoons baking powder (10g)<\/li>\n
  • Sugar powder to decorating the cake<\/li>\n<\/ul>\n

    Steps:<\/strong><\/p>\n

      \n
    1. Preheat the oven to 330\u00b0F (165\u00b0C) on turbo mode, and line a baking pan with parchment paper.<\/li>\n
    2. In a bowl, put all the liquid ingredients, the eggs, honey, olive oil, maple syrup, applesauce, cinnamon and peanut butter and mix well (important) until you get a uniform and thick paste.<\/li>\n
    3. Add the dry ingredients to the bowl, the almond flour, salt, oat flour and baking powder and mix well until you get a thick batter.<\/li>\n
    4. Transfer the batter to the baking pan and place in the center of the oven to bake for 40-45 minutes or until a toothpick comes out dry from the cake.<\/li>\n<\/ol>\n

      Take the cake out of the oven, and out of the pan and let it cool a little.
      \nSprinkle sugar powder over the cake and gobble \ud83d\ude42<\/p>\n

      A little extra from me:<\/strong><\/p>\n

      • The cake can be kept in the fridge in a sealed box for up to 4 days. The cake tastes better the day after preparation.<\/li>\n
      • I don\u2019t recommend omitting the maple syrup or replacing it, because it gives a stunning sweetness to the cake, but if you want, you can replace it with 2 tablespoons of sugar.<\/li>\n
      • You can sprinkle some almond slivers for a delicious crunch on top of the cake.<\/li>\n
      • Peanut butter is the secret ingredient of the cake, its taste isn\u2019t noticeable and it gives amazing moisture and juiciness to the cake. But if you still want to replace it, you can use 2 tablespoons of almond butter.<\/li>\n
      • You can replace the oat flour with rice flour \/ teff flour \/ almond flour (the best version is the one containing oat flour)<\/li>\n
      • You can use only oat flour (1\u00bd cups flour) \u2013 if you choose this option the cake will be a little lower.<\/li>\n
