Soft Vegan Chocolate Chip Cookies
Ingredients
Please note: All of my recipes are measured in universal cups (a measuring cup with a volume of 250 ml) - I recommend choosing them so that you get the most accurate and perfect result.
Suitable for 10–12 medium cookies:
- 1/3 cup almond butter (for alternatives, see “A Little Extra From Me”)
- 1/3 cup maple syrup
- A pinch of salt
- 1 1/2 cups almond flour (for alternatives, see “A Little Extra From Me”)
- 1/2 teaspoon baking powder
- 1/2 cup chocolate chips (for alternatives, see “A Little Extra From Me”)
Preparation
Preheat the oven to 175°C, preferably in turbo mode but not a must.
Place the almond butter, maple syrup, and salt in a bowl and mix well. Add the almond flour and baking powder and mix to form a soft cookie dough that’s not too sticky.
If the cookie dough is too sticky, add 2–3 more tablespoons of almond flour. Finally, add the chocolate chips and mix.
Form medium-sized cookies from the dough and arrange them on a baking tray. Bake for 10–12 minutes, depending on the oven. Remove from the oven, let cool just a little, and serve with love 🙂
A Little Extra From Me:
- You can store the cookies in an airtight container on the counter for up to 5 days.
- You can replace the almond butter with any nut butter you prefer.
- You can replace part of the almond flour with oat flour: use 3/4 cup oat flour and 3/4 cup almond flour. This combination will give you cookies with a slightly crispier exterior and a less chewy interior.
- You can replace the chocolate chips with any add-in you like, such as chopped pecans, raisins, cranberries, shelled and chopped pistachios, and more.
