Soft Vegan Chocolate Chip Cookies

A Little Extra From Me:

  • You can store the cookies in an airtight container on the counter for up to 5 days.
  • You can replace the almond butter with any nut butter you prefer.
  • You can replace part of the almond flour with oat flour: use 3/4 cup oat flour and 3/4 cup almond flour. This combination will give you cookies with a slightly crispier exterior and a less chewy interior.
  • You can replace the chocolate chips with any add-in you like, such as chopped pecans, raisins, cranberries, shelled and chopped pistachios, and more.
