Cottage Cheese Pizza
Ingredients
Please note: All of my recipes are measured in universal cups (a measuring cup with a volume of 250 ml) - I recommend choosing them so that you get the most accurate and perfect result.
Suitable for 4 small pizzas
For the pizza base:
- 250 g cottage cheese of any kind (1 container)
- 2 eggs
- 2 tablespoons almond butter (for alternatives, see “A Little Extra From Me”)
- 1 teaspoon salt
- 1 1/2 cups almond flour (for alternatives, see “A Little Extra From Me”)
- 1 teaspoon baking powder
For the sauce:
- You can use any sauce you like. I made a quick one at home:
- 100 g tomato paste
- 1/4 teaspoon salt
- A little dried oregano
- 1 tablespoon plant-based milk or water
- 200–300 g shredded mozzarella or yellow cheese
- You can add toppings if you like, just make sure not to overload the pizza.
Preparation
Preheat the oven to 180°C, preferably in turbo mode but not a must.
Place the cottage cheese, eggs, almond butter, and salt in a bowl and mix well. Add the almond flour and baking powder and mix until you get a thick batter.
Using a spoon, shape the mixture on a baking tray into circles of even thickness. I recommend making four small circles to get the crispy, delicious crust – it’s truly an unforgettable bite.
Place the tray in the oven and bake for 10 minutes, until the pizzas dry out and set. Remove from the oven and assemble the pizzas: spread the tomato sauce over each one and sprinkle the shredded cheese on top. If you chose to add toppings, now’s the time 🙂
Return the tray to the oven, this time placing it on the top rack, until the cheese melts beautifully and the pizzas are golden and lovely. Remove from the oven and serve with excitement and lots of love 🙂
A Little Extra From Me:
- You can store them in an airtight container in the fridge for up to four days.
- They’re very tasty when reheated in a panini press.
- You can replace the almond flour with 1 1/2 cups of fine oat flour.
- You can replace the almond butter with raw tahini.
- You can also make one large pizza from the mixture instead of four individual ones.
