We all love pancakes,
but you’re going to love these pancakes especially.
They’re plump,
soft,
juicy,
and filled with delicious, nourishing bites.
These oatmeal and cheese pancakes are one of the loveliest recipes to wake up to in the morning.
Mix everything in one bowl,
heat the pan,
and within a few minutes we’ll build ourselves a mesmerizing, joyful tower of pancakes.
You can enjoy them sweet, with yogurt, fruit, and maple syrup,
or reduce the maple syrup a little and turn them into a delicious savory bite.
However you choose to serve them,
they’ll be soft,
indulgent, and super delicious.

Oatmeal and Cheese Pancakes
Ingredients
Ingredients for 6–8 plump pancakes, depending on their size:
- Two eggs
- 1/3 cup farmer cheese, ricotta cheese, or Tavorog cheese.
- 1/4 cup maple syrup.
- A teeny-tiny pinch of salt.
- 3/4 cup oat flour (you can substitute 3/4 cup spelt flour)
- One teaspoon baking powder.
- A little butter / oil for making the pancakes, and your choice of toppings to serve alongside them.
Preparation
In a bowl, mix the eggs with the farmer cheese, maple syrup, and salt.
Add the oat flour and baking powder, and mix into a thick pancake batter.
Heat a pan over medium heat and grease it with a little butter.
Spoon little pools of our pancake batter into the pan and cook them over medium heat, covered, until tiny air bubbles appear on the surface of the pancakes, at this point gently flip them over to cook on the other side and remove them from the pan when they’re ready, repeat until all the pancake batter is gone.
Arrange a mesmerizing, tempting tower of pancakes on a plate and serve with any topping you choose, I chose yogurt with grapes and maple syrup.

- You can keep the pancakes in an airtight container in the refrigerator for 4 days.
- You can reduce the amount of maple syrup in the batter and enjoy the pancakes as a delicious savory bite.
