Meet my newest cookies lately,
chocolate chip, date toffee and coconut cookies 🤤
These cookies have it all,
they’re crunchy on the outside,
juicy and soft on the inside,
and full of little bites of chocolate and dates.
The secret of these cookies is the dates,
which caramelize in the heat of the oven and turn into marvelous, sticky and comforting date toffee,
the kind that connects with the chocolate chips and coconut and creates a bite that’s impossible to resist ✨
These are exactly the cookies that are fun to make when the house is asking for something sweet,
when your coffee is looking for a good bite alongside it,
or when you feel like filling the cookie jar with a joyful treat for everyone at home.
A few minutes of mixing,
one bowl,
and a short bake that fills the entire kitchen with an intoxicating aroma.
You can make them large and plump,
or you can make lots of small, sweet cookies.
Whichever size you choose, you’ll get rich, caramel-like and super comforting chocolate chip, date toffee and coconut cookies.
The dates are all the magic in this bite,

Chocolate Chip, Date Toffee and Coconut Cookies
Ingredients
Ingredients for 6-8 large cookies, you can also make 10-15 medium-small cookies.
- 1/2 cup almond butter.
- 1/3 cup maple syrup.
- A teeny-tiny pinch of salt.
- 3/4 cup almond flour.
- 1/3 cup shredded coconut.
- 1 teaspoon baking powder.
- 6 pitted dates, cut into cubes.
- 1/4 cup dark/milk chocolate chips.
Preparation
Preheat the oven to 175°C, preferably on convection mode, but it’s not a must.
In a bowl, mix the almond butter with the maple syrup and salt, add the almond flour, shredded coconut and baking powder, and mix into a uniform, slightly moist cookie dough.
Add the chocolate chips and the date cubes we cut in advance.
Mix and shape the cookie dough into evenly sized cookies, and arrange them with space between them on the baking sheet, put the baking sheet in the oven and bake for 12-15 minutes, until the cookies set, dry out and turn golden.
Take the cookies out of the oven, let them cool slightly, and serve them alongside a good, comforting cup of coffee or tea.
