These are super tasty and good patties,
that I love preparing for the whole week,
for balanced bites waiting for me in the fridge.
They require just a few minutes of preparation,
and the oven does all the rest for us.
They are tasty and light,
and will work with any flour you choose for them,
and with any spice you add to them.
And if you fell in love with them like I did,
you can also replace the broccoli with cauliflower,
and every week make yourself a new version of these wonderful patties.

Baked Broccoli Patties
Ingredients
Makes 30-40 patties (depending on size):
- 2 eggs (size M/L)
- 200 g cream cheese / white cheese / sour cream (for alternatives see “A little extra from me”)
- 1 teaspoon salt
- ½ teaspoon baking powder
- 4 cups broccoli, finely chopped into crumbs in a blender (about one whole broccoli) (for alternatives see “A little extra from me”)
- 1 cup grated yellow cheese / mozzarella
- ¼ cup flour of your choice
Preparation
Preheat the oven to 180°C, turbo mode.
In a food processor, pulse the broccoli until you get fine crumbs.
Put the eggs, cheese, salt, and baking powder in a bowl and mix well. Add the broccoli crumbs and the grated cheese and mix again. Add the flour and mix one last time into a uniform mixture. With slightly wet hands, shape medium-sized patties from the mixture.
Line a standard baking tray with baking paper (I used two trays) and grease with olive oil. Arrange the patties with small gaps between them (not too big), and place the tray in the oven for 30-35 minutes. After 20 minutes, flip the patties and continue baking until beautifully and mesmerizingly golden. Take out of the oven, let cool a little, and serve at the table with fresh vegetables and your favorite dip 🙂
A little extra from me:
- You can keep the patties in the fridge in an airtight container for a week.
- Baked broccoli patties are perfect cold from the fridge and also after reheating in the microwave / toaster oven / pan..
- You can add any spices you like to the mixture.
- You can replace the 200 g of cheese with 1 cup mashed baked potato or sweet potato / 1 cup tofu grated on the medium side of a grater.
- You can replace the broccoli crumbs with cauliflower crumbs.
