Cinnamon Balls
Ingredients
Please note: All of my recipes are measured using universal cups (250 ml measuring cups). I highly recommend using them to achieve the most accurate and perfect result possible.
Makes 13–15 balls:
- ½ cup almond butter (for substitutes, see “A Little More from Me”)
- ¼ cup maple syrup (for substitutes, see “A Little More from Me”)
- A tiny pinch of salt
- ½ teaspoon ground cinnamon (for substitutes, see “A Little More from Me”)
- 1 cup shredded coconut (for substitutes, see “A Little More from Me”)
For the coating:
- ¼ cup shredded coconut
- A little cinnamon
Preparation
Place the almond butter, maple syrup, salt, and cinnamon in a large bowl and mix until combined. Add the shredded coconut and mix until a uniform mixture forms.
Place the shredded coconut and cinnamon for the coating on a plate and mix together.
Roll the mixture into balls and coat them in the coconut and cinnamon mixture.
Arrange the balls in a container and store them in the fridge or freezer. Whenever you’d like a treat, enjoy a cinnamon ball or two alongside your coffee 🙂
A Little More from Me
- You can store them in an airtight container in the fridge for up to one week or in the freezer for up to two weeks.
- You can enjoy the cinnamon balls at room temperature for a soft, melt-in-your-mouth bite. After chilling in the fridge, they become firmer and more substantial. They’re also delicious after being stored in the freezer and left on the counter for a few minutes before eating.
- You can replace the almond butter with tahini or any nut butter you enjoy. Almond butter provides the most neutral flavor.
- You can replace the maple syrup with any liquid sweetener of your choice.
- You can replace the cinnamon with vanilla extract if you’d prefer a more neutral flavor.
- You can replace the coconut with 1½ cups almond flour.
- The coconut coating is optional. You can leave the balls uncoated if you prefer.
