We all want a crispy, addictive, nourishing bite,
the kind you make in just a few minutes and enjoy nonstop 😍
My personal toaster sandwich is exactly that bite.
It has feta cheese that dots every bite with wonderful saltiness and creaminess,
grated mozzarella that gives it winning crispiness,
and raw tahini that brings all the ingredients together into a satisfying, indulgent sandwich.
This time I chose to add herbs,
but you can add tuna, corn, spinach, carrot, green onion, or any topping you choose to this sandwich.
A few minutes of mixing,
a few more minutes in the toaster,
and a warm, crispy bite full of delicious flavors is waiting for us.

Personal Toaster Sandwich
Ingredients
Recipe for one personal sandwich:
This recipe is suitable for a large toaster,
If you have a small toaster, divide the mixture into two portions.
- One egg
- Two tablespoons raw tahini
- 1/4 teaspoon baking powder
- A teeny-tiny pinch of salt
- A small cube of sheep’s milk feta or Bulgarian cheese
- A handful of grated mozzarella cheese
- A topping of your choice, I used 1/3 cup herbs (cilantro and parsley)
Topping options: tuna, corn, fresh/frozen spinach, grated carrot, green onion
Preparation
Preheat the toaster to high heat.
Put the egg, raw tahini, salt, and baking powder into a bowl, and mix until smooth and thick.
Add the cheeses and mix until evenly combined.
Fold a sheet of parchment paper in half, open it, and grease it with a little olive oil.
Place all the mixture on one half of the parchment paper, cover the mixture with the other half, and put it into the toaster for 8-10 minutes.
Patience is needed, every toaster has a different heat intensity, so the preparation time will vary according to the heat intensity of your toaster.
Take the sandwich we made out of the toaster and place it on a cutting board, cut it into cubes, and enjoy! The crispiest, most indulgent bite is when it’s hot (it stays crispy after cooling too, but not to the same degree).
A little more from me:
- You can keep it in an airtight container in the refrigerator for two days, the crispiness decreases over time.
