There aren’t many things as joyful as a tray of hot, golden schnitzels coming out of the oven.
The kind with a crispy coating, a soft, juicy center, and an aroma that brings everyone into the kitchen to ask when we’re eating.
This oven-baked schnitzel is exactly all of those things.
The combination of almond flour, coconut, and sesame creates a crunchy coating full of flavor, and the seasoned egg mixture makes every bite rich and wonderful.
Dip,
coat,
arrange on the baking sheet,
and let the oven work its magic.
You can serve the schnitzels alongside a favorite dip and a fresh salad,
or make the seasoned sweet potato fries too, and turn it all into a colorful, exciting family meal.

Gluten-Free Oven-Baked Schnitzel
Ingredients
Ingredients for one kilogram of chicken breast, sliced into schnitzels:
For the coating mixture:
- 1/2 cup almond flour.
- 1/2 cup shredded coconut.
- 1/3 cup cornstarch.
- 1/3 cup sesame seeds.
- One teaspoon salt.
For the egg mixture:
- Two eggs.
- One teaspoon salt.
- One teaspoon sweet paprika.
- One teaspoon crushed garlic.
- One teaspoon dried oregano (optional, but it adds so much, you can use any herb you love).
Preparation
Preheat the oven to 200°C, preferably on convection mode, and line a baking sheet with parchment paper.
Prepare three bowls,
one bowl with the coating mixture, with all the ingredients mixed together.
One bowl with the egg mixture, with all the ingredients mixed together.
And one bowl for placing all the coated schnitzels.
Dip the chicken breast for the schnitzels first into the egg mixture, and then coat it in the schnitzel coating mixture.
Place all the schnitzels on a plate until you arrange them, spaced apart, on a baking sheet lined with parchment paper, with a little olive oil spray over them.
Bake for about 15-29 minutes.
Turn the schnitzels over and bake for another 10 minutes, until beautifully golden.
Take the schnitzel out of the oven and serve alongside a favorite dip, with lots of excitement :).

- You can keep the cooked schnitzels in an airtight container in the refrigerator for 5 days.
- Recipe for the sweet potato fries in the picture: cut the sweet potato into fry-shaped strips and mix with: 2 tablespoons olive oil, 2 tablespoons maple syrup, one teaspoon salt, one teaspoon sweet paprika, and one teaspoon dried oregano.
Arrange the fries coated in the mixture on the baking sheet, spaced apart, and bake on convection mode for 20-25 minutes.
