This is a recipe I really love to eat,
and also to prepare.
It is quick and fun,
and one that everyone enjoys biting into.
My tofu skewers have a stunning, mesmerizing glaze.
You can prepare them on the grill,
in a pan
in the Ninja,
or in the oven.
In every way you choose to make them,
you will enjoy a wonderful, uncompromising bite with a slightly different texture.
My favorite way is on the grill or in the Ninja,
In both these ways the skewers come out with a smoky and wonderful flavor.
You can also prepare the tofu with the glaze the night before,
and leave it with all the flavors in an airtight container in the fridge until the moment you cook it.
And about the skewers,
you absolutely don’t have to skewer the tofu,
You can also make wonderful tofu cubes without skewers.

Perfect Tofu Skewers
Ingredients
Makes 2-3 servings:
- 1 block (300 g) firm tofu (I usually double the quantities)
For the glaze:
- 4–5 mint stems (for alternatives see “A little extra from me”)
- Half an orange/lemon with the peel
- ¼ cup maple syrup (or any sweetener you prefer)
- ¼ cup olive oil
- 1 teaspoon salt
- A few small skewers for skewering the tofu cubes (not mandatory at all)
Preparation
Take the tofu out of its plastic wrap and dry it well with paper towel. Cut it into large, thick rectangles. Make sure you cut the tofu into cubes that can be skewered.
Prepare the glaze:
Put all the glaze ingredients into a blender and blend everything into a uniform mixture. Spread the glaze over the tofu cubes. If you chose to skewer the tofu cubes, I recommend skewering them before spreading the glaze.
Let the glazed tofu rest for 15 minutes. You can also leave it overnight in the fridge, even with all the glaze that’s left in the blender.
Take it out of the fridge half an hour before cooking. Prepare the tofu skewers on the grill over medium-high heat on both sides until you get beautiful and mesmerizing grill marks. You can also prepare the tofu cubes in a grill pan, a flat pan, or in the oven (top rack), preheated to 210°C on turbo mode, for 12–15 minutes, then flip for another 10 minutes until browned. Serve alongside fresh vegetables, a rich salad, or your favorite dip.
A little extra from me:
- You can store in the fridge in an airtight container for five days. It’s very tasty to reheat the tofu cubes in a toaster oven.
- In the glaze you can replace the mint with any herb you like.
- If you prefer, you can leave out the sweetener in the glaze (but then the coating will be less sweet and less sticky to the tofu).
- It is very important to dry the tofu well before spreading the glaze on it.
