This is one of our favorite dinner meals.
It is light and tasty,
and suitable for all family members.
Fun and easy to prepare,
and you can upgrade it each time with a different topping.
This bite was born when the kids were tiny and I wanted to give them independence.
And so I started preparing all kinds of bites in a size perfect to hold and eat with pleasure and ease.
My cauliflower fingers can also be made from broccoli,
and it is a fun and light way to add more wonderful and healthy vegetables to every family member’s menu.

Roasted Cauliflower Fingers
Ingredients
suitable for a family-size pan:
- 3 cups of fresh cauliflower, finely pulsed into crumbs in a food processor (for alternatives, check out “A little extra from me”)
- 2 eggs (size M/L)
- ½ teaspoon salt
- ½ teaspoon baking powder
- ¼ cup toppings (optional): you can sprinkle on the batter any topping you choose just like you sprinkle on pizza, you can also add into the batter itself toppings like corn/olives/tuna etc.
Preparation
Preheat the oven to 200 °C (400 °F), preferably in turbo mode but not required.
Pulse the cauliflower florets in a food processor until they resemble fine crumbs.
Place all the ingredients in a bowl: the cauliflower crumbs, hard cheese, eggs, salt, and baking powder, and mix until a uniform, sticky dough forms (if you chose to add toppings, this is the time to add them).
Place parchment paper on a standard oven tray and grease with a little olive oil.
Transfer the batter to the baking tray, using damp hands flatten it into a rectangle with uniform thickness.
Drizzle with a little more olive oil on top and bake for 20–25 minutes until everything is browned and beautiful.
Cool slightly, then cut into finger shapes and serve alongside fresh vegetables.
A little extra from me:
- You can store in the fridge in an airtight container for five days.
- Very tasty to reheat in a toaster or eat straight from the fridge.
- They fit perfectly into the lunchboxes of the kids and ours.
- You can replace the cauliflower crumbs with broccoli crumbs.
