You can make this salad with any type of fruit you choose,
but you must keep the seared dates and the pecans – they’re what create all the magic.

Special Lettuce Salad
Ingredients
Suitable for a family-sized salad:Please note: All of my recipes are measured in universal cups (a measuring cup with a volume of 250 ml) - I recommend choosing them so that you get the most accurate and perfect result.
- 5 dates (preferably Medjool)
- 2 heads of crispy lettuce, such as Lollo or Romaine
- 1/3 cup toasted sliced almonds (or any other nuts)
- 1 nectarine (or any fruit you choose)
- Manchego / Pecorino / Tom cheese
For the dressing:
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- Juice from 1/2 lemon
- 1/2 teaspoon salt
- Zest from 1/2 lemon
Preparation
In a hot pan (over medium heat) greased with olive oil or butter, sear the dates. Remove them from the pan and let them cool, placing them cut side up.
Roughly chop the lettuce and place it in a salad bowl. Slice the nectarine into thin slices.
Prepare the dressing:
Place all the dressing ingredients – olive oil, maple syrup, lemon juice and zest, and salt – in a jar or bowl and mix well. Just before serving, pour the dressing over the salad and toss.
Assemble the salad directly in the serving bowl, sprinkle slices of the hard cheese you chose and the toasted almond slices on top, and serve.
A Little Extra From Me:
● You can make the salad with any fruit you like – I recommend choosing a slightly tangy one.
● You can replace the sliced almonds with any nuts you prefer.
