I bit in and felt those tiny, crispy bourekas flakes,
so bold, so wild, the kind you only get when eating bourekas.
Let’s be honest here,
this is a kind of spinach bourekas made in a sandwich toaster,
It’s not exactly the greasy kind from the bakery,
it’s a thin, Greek-style bourekas that’ll make anyone who bites into it cry out: wow wow wooow.
It’s a flat, Greek spinach bourekas,
crispy,
crazy good,
totally irresistible,
the kind you just can’t stop eating!
So go grab some fresh spinach,
head back home, and heat up the toaster,
because this bite is out of this world!

Greek-Style Spinach Bourekas
Ingredients
For one satisfying and truly indulgent personal serving:
- A generous handful of fresh spinach leaves, washed and clean
- 1 egg
- 2 tablespoons raw tahini (for alternatives, see “A Little Extra From Me”)
- ¼ teaspoon baking powder
- A tiny pinch of salt
- A small cube of feta or Bulgarian cheese
- 3-2 tablespoons shredded mozzarella
Preparation
Preheat your sandwich toaster to high heat.
Wash the fresh spinach and set aside to dry.
In a bowl, combine the egg, raw tahini, salt, and baking powder, and mix until you get a thick, smooth batter. Add the spinach and cheeses, and stir until all the spinach leaves are fully coated in the mixture.
Fold a piece of parchment paper in half, then open it and lightly brush with olive oil. Place the mixture on one half of the parchment paper, fold the other half over to cover it, and place it in the sandwich toaster for 8–10 minutes. Be patient – each toaster has different heat strength, so cooking time will vary depending on your device. I recommend checking the bourekas every few minutes to make sure it doesn’t burn and is just cooking to perfection.
Take your spinach bourekas out of the toaster and place it on a cutting board. Cut into cubes and enjoy! The best, crispiest bite will be when the bourekas is hot (it stays crispy even after cooling, but not quite the same).
A little extra from me:
- You can store the spinach bourekas in the fridge in an airtight container for up to three days, and reheat it in the toaster or toaster oven after cooling.
- I recommend eating it shortly after preparing.
- You can also prepare it and take it with you on the go – just make sure to let it cool completely before placing it in an airtight container.
- You can swap the raw tahini with almond butter.
