Meet my perfect, balanced little magic squares –
amazing vegan cocoa cookies!

Vegan Cocoa Cookies
Ingredients
Please note: All of my recipes are measured in universal cups (a measuring cup with a volume of 250 ml) - I recommend choosing them so that you get the most accurate and perfect result.
Suitable for a standard baking tray:
- 1/2 cup almond butter (for alternatives, see “A Little Extra From Me”)
- 1/3 cup maple syrup
- A pinch of salt
- 1 1/2 cups almond flour (for alternatives, see “A Little Extra From Me”)
- 1/2 teaspoon baking powder
- 2 tablespoons cocoa powder (for alternatives, see “A Little Extra From Me”)
Preparation
Preheat the oven to 175°C, preferably in turbo mode but not a must
Place the almond butter, maple syrup, and salt in a bowl and mix well. Add the almond flour, baking powder, and cocoa powder, and mix with a spoon or spatula until you get a slightly sticky, crumbly dough.
With your hands, form the dough into a ball, roll it out to an even thickness between two sheets of baking paper, and transfer it to a baking tray. Using a large, sharp knife, cut the dough into tiny bite-sized squares.
Bake for 7-10 minutes. Note: the dough will firm up only after it cools completely – it will not be very hard right out of the oven. Remove the tray from the oven, let it cool fully, separate the baked squares, and serve with love alongside a good cup of coffee.
A Little Extra From Me:
- You can store them in an airtight container on the counter for up to 4 days.
- You can replace the almond butter with peanut butter.
- You can replace the almond flour with 1 cup oat flour.
- You can replace the cocoa powder with 1/2 teaspoon cinnamon or vanilla extract and add 2 more tablespoons of almond flour.
