These are the meals I love making most on days when I don’t have much time to invest,
but I still want to give the people I love a nourishing family meal full of wonderful flavors.
It has everything,
juicy chicken,
soft, golden potatoes,
and wonderful vegetables that soak up all the flavors and turn into a marvelous bite.
The most fun thing about this meal is that you can make it a little differently every time.
One time, use potatoes,
another time, sweet potatoes,
and you can replace the broccoli and cauliflower with green beans or shelled soybeans.
The secret to this meal is keeping the pans separate.
Arrange one ingredient in each pan:
the chicken in one pan,
the potatoes in the second pan,
and the vegetables in the third pan.
That way, every ingredient gets exactly the baking time it needs,
keeps its wonderful texture,
and comes out of the oven just the way we love it.
And all the magic happens with one marinade that works for everything.
It has the delicate sweetness of maple syrup,
the wonderful freshness of lemon,
the irresistible aroma of garlic and oregano,
and olive oil that coats all the ingredients and makes them delicious and marvelous.
A few minutes of mixing and assembling the pans,
and from there the oven works all the magic.
Before long, a complete oven-baked meal is waiting for us,
colorful, family-style and comforting,
the kind you place in the center of the table and serve with great love to all the people we love most 💜

A Complete Oven-Baked Meal
Ingredients
Ingredients for a family meal
- 3 chicken leg quarters, separated into thighs and drumsticks
- 2 bags of small microwave-ready potatoes (you can substitute regular potatoes or sweet potatoes)
- Whole cauliflower and broccoli florets (you can substitute frozen green beans or shelled soybeans.)
For the marinade:
- 1/3 cup maple syrup
- Juice and zest of one whole lemon
- 1 garlic clove
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 teaspoon dried oregano (or any other seasoning)
Preparation
Preheat the oven to 180°C on convection mode.
Mix the marinade ingredients in a bowl.
Arrange the chicken in a baking pan and brush it with the marinade on all sides.
Mix the remaining marinade with the potatoes and with the cauliflower and broccoli (each in a separate baking pan).
Lay a sheet of baking paper loosely over the pan of potatoes and over the pan of cauliflower and broccoli; simply place the baking paper on top without sealing it.
Put all the pans into the preheated oven in the following order: the chicken pan in the upper part of the oven, the cauliflower and broccoli pan in the center, and the potato pan in the lower part.
After 15 minutes of baking, remove the paper from the cauliflower and broccoli pan and bake it for about 10 more minutes.
Take it out of the oven and leave the chicken and potatoes to cook for another 25 minutes.
Note: once the potatoes soften, remove the baking paper covering them.
Switch the positions of the chicken and potato pans and bake for another 10 minutes.
Take everything out of the oven and serve it with love to the people we love.
A little more from me:
- You can keep it in an airtight container in the refrigerator for five days.
- You can use any herb you like instead of the oregano.
