I’m in love with broccoli.
Beyond its marvelous beauty,
This vegetable needs to be more appreciation,
It has wonderful minerals in it,
And abundant dietary fiber,
It’s delicious and full of fascinating textures,
And it’ll surrender to almost any flavor we choose for it.
My oven roasted broccoli is amazing,
It can be the center of the meal or a stunning addition to your meal.
You just have to choose when and with what to prepare it,
Because there’s nothing easier and simpler than making broccoli in the oven,
Especially with the stunning addition I created for it.
Mix quickly,
Combine the broccoli and the other ingredients,
Put in the oven to bake and the broccoli is ready to be served.

Oven roasted broccoli
Ingredients
Suitable for 4 dishes, round pan of 9.4” (24cm) diamete
- A whole broccoli floret cut into small florets
For the gravy
- 2 eggs (for the vegan version have a look at “A little extra from me”)
- 250ml coconut cream / non-dairy cream / cooking cream
- ½ teaspoon dry oregano (you can replace it with thyme or any herb you like)
- ½ teaspoon of garlic powder / crushed garlic clove
- ½ teaspoon salt
- 1 tablespoon oat flour (optional, it thickens the sauce)
- A handful of grated cheese such as mozzarella / parmesan / any type of yellow cheese
Preparation
Preheat the oven to 355°F (180°C) preferably in turbo mode but it’s not a must.
In a separate bowl, put all the gravy ingredients: the eggs, coconut cream, oregano, garlic, salt and oat flour and mix well. Pour the gravy over the broccoli and sprinkle the grated cheese over it.
Put it in the oven to bake for 20-25 minutes until the cheese surrenders to the heat, the broccoli is baked but still biteable and the magic is happening in the baking pan.
A little extra from me:
- The broccoli can be baked in the fridge in a sealed box for up to 4 days.
- You can heat it in the microwave / in a panini press / in a pan with a little milk.
- You can replace the broccoli with cauliflower florets.
- For the vegan version: replace the eggs with ¼ cup of lentil flour. If you choose this version, I recommend grinding all the ingredients of the gravy in a shake blender to avoid lumps of lentil flour.
