This bite needs nothing more than good toast, a little sour cream, a pinch of salt, and plenty of enjoyment.

Onion Omelette
Ingredients
Serves 1–2 people:
- 2 tablespoons olive oil
- 2 medium white onions
- A pinch of salt
- 3 mint leaves
- 2-4 eggs
Preparation
Cut the onion in half, then slice it thinly against the grain. Here’s a perfect tip for cutting onions without tears: soak a paper towel in water and place it next to your cutting board while slicing. The towel will absorb most of the gas released by the onion that makes you tear up.
Heat a pan over medium heat and add olive oil. Add the onion and salt, and cook over medium heat, stirring, until the onion is caramelized and lightly browned. Add a handful of mint leaves (discard the stems) and stir. Let everything cook together for a few seconds.
Make small wells among the onions and mint, and crack an egg into each well. Cook until the eggs reach your desired level of doneness, then serve 🙂 This bite only needs a good toast, a little sour cream, and a pinch of salt.
