This is a quiche that is one big celebration.
It needs only a joyful salad on the side,
and you have a real meal.
It is nutritious and filling,
delicious and indulgent,
full of textures,
and wonderfully creamy.
Working with its dough is simply amazing and so easy and pleasant,
and the caramelized onion can be replaced with any vegetable you choose,
just sauté it before adding it to the mixture,
and it will come out perfect!

Onion Quiche
Ingredients
For a 26 cm round quiche pan:
For the dough:
- 1 egg (size M/L)
- 200 g cream cheese (20% fat or more)
- ½ teaspoon salt
- ½ cup oat flour (for alternatives see “A little extra from me”)
- ½ cup almond flour
- 1 teaspoon baking powder
For the fried onion mixture:
- 4-5 purple onions (for alternatives see “A little extra from me”)
- 2 tablespoons olive oil
- ½ teaspoon salt
For the filling:
- 3 eggs
- 200 g cream cheese / white cheese / cottage cheese / thick yogurt
- 1 flat teaspoon salt
- 1 tablespoon honey (optional, adds a lot)
- A few thyme leaves (optional, adds a lot)
Preparation
Preheat the oven to 175°C, preferably on turbo mode but not mandatory.
Prepare the dough:
Put in a bowl all the dough ingredients – start with the egg, the salt, and the cream cheese and mix well. Then add the oat flour, almond flour, and baking powder and mix well to create a dough ball.
With a rolling pin, roll out the dough ball between two baking papers into the shape of the baking pan. Transfer the dough together with the bottom baking paper into the pan. If there are any holes in the dough, fill them with leftover dough.
Prepare the onions:
Cut the onions into rings and cook them in a pan with olive oil until caramelized. Let them cool.
Prepare the filling:
Put in a bowl the eggs, cream cheese, salt, honey, and thyme and mix well. Add the caramelized onions and mix again.
Pour the mixture into the pan with the dough (no need for pre-baking the dough) and spread it evenly inside. Put the quiche in the oven for 30-35 minutes, until golden and set. Take out of the oven, let cool a little, and serve our onion quiche with love 🙂
A little extra from me:
- You can keep the onion quiche in the fridge in an airtight container for four days.
- Reheating works great in the oven / toaster oven / or even in a toaster.
- You can replace the onion with any vegetable you like, sautéed in a pan before adding to the mixture.
- For a keto version, you can replace the oat flour with ¾ cup almond flour.
