If there’s one recipe I make almost every day during summer vacation – it’s my perfect Banana Pancake Candies!
And this time, I decided to upgrade them,
and add the green, magical gold that has recently returned to my kitchen,
and that is, of course, Mankai – the smallest leafy green in the world!
Did you know that Mankai’s nutritional values are not destroyed even when heated?
Mankai hides an amazing nutritional abundance.
It contains complete protein,
folic acid,
plant-based vitamin B12,
and many other nutrients – all proven to be well absorbed and bioavailable.
This is truly the most wonderful way to enrich our perfect bites – and those of our loved ones – with a small, playful addition that makes a huge difference!

Banana and Mankai Pancakes
Ingredients
- 2 ripe bananas
- 3 eggs (for the vegan version, see “A Little Extra From Me”)
- 1/2 cup fine or whole rolled oats
- 1/4 teaspoon baking powder
- 1–2 tablespoons maple syrup (adds a lot, but optional)
- 2 cubes of Mankai
Preparation
Place all the ingredients – bananas, eggs, oats, baking powder, maple syrup, and Mankai cubes – into a blender and blend until you get a smooth batter.
Heat a pan, and once it’s very hot, lower the heat to low-medium. Using a spoon, pour small puddles of batter into the pan. I recommend covering the pan with a lid during cooking – this will make it easier to flip the pancakes. If the pancakes stick to the pan, try greasing it lightly.
When small bubbles appear on the pancakes and their edges start to dry slightly, flip them and cook briefly on the other side. Transfer to a serving plate. Serve the pancakes warm or at room temperature, as they are or with fresh fruit on the side – this is a perfect, nourishing, and wonderful meal, rich and full of nutritional value.
A Little Extra From Me:
- You can store them in an airtight container in the fridge for up to four days.
- For the vegan version: replace the eggs with 1 cup of plant-based milk + an additional 1/2 cup of fine oats.
- The magic of these pancakes is that you can take them anywhere — they’re mess-free and perfect for eating with your hands on a picnic, during summer activities, at the pool, or even on trips.
