Strawberry Banana Cake
Ingredients
Suitable for a rectangular pan size 7.8” * 9.8” (20*25cm) or a round pan with a 9.4” (24cm) diameter
- 2 ripe bananas
- 4 eggs
- ¼ cup olive oil
- ⅓ cup sugar (can be replaced with maple syrup or coconut sugar)
- Pinch of salt
- 1½ cups oats flour
- 2 teaspoons baking powder (10g)
- 3-4 strawberries
- 2 tablespoons maple syrup to pour over the cake
Preparation
Preheat the oven to 350°F (175°C) on turbo mode (not a must but recommended), and line a baking pan with parchment paper.
Mash the bananas with a fork, add the olive oil, sugar, eggs and salt to the bowl and mix well to a uniform batter.
Add the oat flour and baking powder and mix again to a uniform and thick batter. Transfer the batter to the baking pan.
Cut the strawberries lengthwise and scatter the slices over the cake batter, placing them one slice next to the other.
Put in the oven to bake for 25-30 minutes or until a toothpick comes out dry and with a few crumbs on it from the cake. Take out of the oven, cool for a little while, drizzle a little maple syrup and serve with great joy 🙂
A little extra from me:
- The cake can be kept in the fridge in a sealed box for up to 3 days.
- The oat flour can be replaced with 1½ cups of almond flour / 1¼ cups of spelt flour (contains gluten).
- You can omit the strawberries and scatter banana slices over the cake.
- If you are a cinnamon lover, you can add ½ teaspoon of cinnamon to the cake.
