This time I give you the fastest and funnest version of it,
Eggplant slices in a panini press!
They’re ready in a few quick minutes,
They fit perfectly in a sandwich,
Especially in a meatball sandwich or an Egg Salad or a Friday schnitzel,
They’re wonderful in an omelet,
Insane In stews,
And pampering to eat just like they are as well.

Eggplant slices in a panini press
Ingredients
The quantities are according to the size of your panini press and the amount of slices you want to make. For this recipe, I recommend choosing thin eggplants and not a large Baladi eggplant.
- 1 eggplant
- A little olive oil
- Pinch of salt
Preparation
Heat the panini press to high heat.
Slice the eggplant into slices of uniform thickness, try not to slice them too thin or too thick.
Place parchment paper on the panini press and spray it with a little olive oil. Arrange the eggplant slices on top of it and spray a little more olive oil and sprinkle a little salt on the surface of the eggplant slices. Cover with another parchment paper and close the panini press for a short cooking time of 5-10 minutes (the cooking time depends on the heat intensity of your panini press).
As soon as the eggplant slices surrender to the heat and get beautiful burn marks on both sides, take them out of the panini press and serve them with great joy.
You can combine the eggplant slices in stews, in sandwiches, in an omelet or simply eat them just like that with great pleasure.
A little extra from me:
- You can keep the eggplant slices in the fridge in a sealed box for 4 days.
- You can also make the recipe using zucchini or courgette slices, it turns out wonderful.
- I recommend buying a light eggplant with a slightly hard texture, choosing such an eggplant will give you a less bitter and more juicy bite.
